Are you looking for a healthy, tasty, gluten-free, vegetarian dinner idea? I have just the thing.
I know for many people the words healthy, vegetarian and gluten-free don’t equate delicious, but truthfully, healthy eating can indeed be delicious!!! Trust me!!!!
I found the inspiration for this recipe in a blog post I came across. It’s made with polenta, roasted vegetables, marinara sauce and cheese. I will add the link at the bottom so you can see the actual recipe. But remember, it’s just a guideline…use whatever vegetables and herbs you like.
I started by roasting carrots, onions, fennel, bell pepper, and a fresno pepper. While they are nice and warm from the oven, you can add in some herbal goodness by adding basil, oregano, and/or rosemary.
Cook up some polenta adding a little parmesan. You can definitely use less than the recipe calls for to keep the fat down (or omit it all together). Pour the polenta into a baking dish, layer on your vegetables and herbs, cover in marinara/spaghetti sauce and top with shredded mozzarella. Again, you can use less, use low-fat or use a cheese substitute if you want it vegan . Bake for 30 minutes, cool for 10 and just see if you can manage to eat only one piece!!!
I am already planning to make this again, but I’m going to include poblano peppers, black beans, cilantro and cumin to the veg mixture and substitute enchilada sauce or picante sauce for the marinara and have a nice Mexican polenta lasagna….sounds great doesn’t it????
